The recipes are authentic, used by some of the best chefs in Charleston and featured in the local restaurants -- if that gives you any idea of the quality of recipes you will find in this book! In fact, my DIL went to Charleston (SC) with a sorority sister and together, they attended a wine-tasting and southern cooking class as part of the tour. Let me tell you, she prepared for us the recipe she had there - the Jambalaya --- and it was one of those recipes that is so extraordinary, you have to make it for yourself! That recipe was featured in this cookbook and for that reason alone, I bought this cookbook. However, there are many nice surprises in the form of other southern recipes that I didn't expect and am glad to have this book in my collection.
