A delight to read. While the recipes are written in an old-Fashioned way, they are understandable and could be used with slight modifications.

Written in 1919, the recipes read like the ones my grandmother and great-grandmother wrote. A pinch of this, a dab of that...just the way Grandma cooked. While I sometimes had to look up some of the names of tools or products used in the recipes (because they change with time), the recipes are still relevant and provide a sound basis for cooking Italian from scratch the old fashioned way. No microwaves, sometimes with a wood stove and sometimes cooking food that can't be found in the normal grocery store.

This has some great recipes. I lived next door form an older Italian lady who taught me how to "think"Italian in the kitchen. This goes with many of the ideas she taught me. She was from the north, her husband was from the south and her mother was Sicilian. She said she had to learn how to make everyone happy. She taught me that Italy is just as much as a melting pot as America, specially the foods. Enjoy!

I read other reviews about being an experienced cook to use these recipes. I've been cooking for over 40 years, but I am not able to figure any measurements. Not knowing what a new recipe is actually supposed to taste like, I find I need exact measurements until I have cooked the dish a few times and then can tweek it to my taste. These recipes have already been tweeked.

This is one of my favorite eCookbooks. As a chef and writer, I appreciate old cookbooks just as much as I appreciate a Thomas Keller or other modern culinary genius. The meatballs are to die for, as are all the traditional recipes. My favorite is the bread and the Bolognese sauce. For me---a little German girl, who sometimes years for someone's Italian Grandmother's cooking, I treasure this.

This book was fun to read - clearly translated by an Italian person who learned how to cook at her/his mother's side in the kitchen. Just about useless for most cooks in the absence of exact measures, temperatures, description of the type of cut of meat to use in many of the recipes. Reminded me of recipes I have in my Hungarian cookbooks (I am Hungarian) "take a nice oxtail": "make a roux as usual"; "cook it until it is half done". Charming, entertaining and pretty useless in the kitchen.
This book is not what I expected. It really is not an Italian cookbook. I is great for people that hunt but I do not eat brains and many of the things in it.
