Janet Ross wrote the classic cookbook Leaves from Our Tuscan Kitchen, or, How to Cook Vegetables, which is a collection of recipes supplied by the Rosses' chef, Guiseppi Volpi, at Poggio Gherardo.

Janet Ross wrote the classic cookbook Leaves from Our Tuscan Kitchen, or, How to Cook Vegetables, which is a collection of recipes supplied by the Rosses' chef, Guiseppi Volpi, at Poggio Gherardo. The cost of repair was quite expensive, and the Rosses were required, inter alia, to sell their painting School of Pan to help pay for repairs. In 1902 Henry Ross died. During World War I, Lina Waterfield's castle was requisitioned for military purposes. Lina, her husband and daughter moved in with the Rosses during this period. In her autobiography, Lina's daughter Kinta also portrays Janet as somewhat intimidating in appearance, but very kind and loving.

The recipes which Janet Ross collected and faithfully recorded in Leaves from our Tuscan Kitchen were those of Guiseppe Volpi, her cook for over thirty years. Though the preparation and cooking of fresh vegetables is the book's main theme, recipes for risottos, pasta, and soups are included.

Leaves from Our Tuscan K. .has been added to your Basket. Her, great-great-nephew, Michael Waterfield, himself a chef of renown and successful restaurateur,has revised the book adding more recipes. All of the recipes in the book have been served in his restaurant 'The Wife Of Bath' in Wye, Kent of which he was chef/proprietor for many years, and was widely acclaimed as a 'bastion' of good, tasteful food served in relaxed comfortable surroundings.

Mrs Ross is a fascinating human being and her approach to native culture, including food, in every place she lived was the way to live our lives wherever we find ourselves...one day, in full, at a time.

This is a wonderful turn-of-the (last) century Italian vegetable cookbook. Not all recipes are vegetarian; ham and anchovies are sometimes used as seasonings. But the recipes are really good, and there are a lot of them; three different pumpkin soups or stuffed mushrooms rather than one. Like other old cookbooks, quantities are often described as "a bit", or just "add oil", and sometimes ingredients are taken for granted (eg. I don't think salt is ever mentioned). So not for beginners! But the great thing about it is that a huge number of recipes (or shall we say recipe sketches) are packed into this little book.

Note: the original edition is public domain and available in cheap paperbacks with no pictures. But the hardback would be nice as a gift, or for those who like to browse for inspiration.

Liked the content but pricey for what you get. Glad I ordered from here because the website charges shipping on top of their price. I do research and liked the book.
