Good book for those just getting started making vegan/vegetarian meals for kids and if the kids are still young. No new, creative ideas if one has been at it for awhile.

Good book for those just getting started making vegan/vegetarian meals for kids and if the kids are still young. Many of the meals are not necessarily typically kid-friendly, so older children used to a different (more mainstream) way of eating may not be receptive. In addition, several of the recipes are too complicated to be considered "quick. Lastly, I was annoyed at several "egg-free" recipes that were not vegan. Vegetarians will eat eggs, so why not make all the egg-free recipes vegan?

I readily admit I am an uninspired cook and the state of my pantry usually rivals Mother Hubbard's. But this book, as promised, did contain many new and easy ideas and combinations that are quick to prepare from common ingredients.

We are almost vegetarian, so this book appealed to me and my interest in feeding my children healthy and interesting "vegetarian" meals.

A sample recipe: Veggie Burgers: 2 veggie burgers, 2 buns, 2 lettuce leaves... Are you kidding? Who needs a recipe to be told how to assemble a burger? This cookbook lacks imagination and basically substitutes a bunch of imitation meat products into their meat-containing counterparts. If you need to be told how to take a standard cookbook and substitute meat substitutes, this is the book for you. If you want ideas of how to make unique vegetarian dishes for your child without having to use tofu or meat substitute in every main dish, look elsewhere. Contains absolutely no pictures of the food, something that would actually interest children in the food being prepared.

I use this book practically every day. I have tried several recipes from it and some of them are complete gems! The thing that I really love about this book is that the ingredients are good and I feel good about feeding my son the things that I make from it. As far as ingredients go, I usually dont have trouble finding most of the stuff, a lot of it is found in your regular grocery store. I had trouble finding tamari at my local shoprite but Im sure with some looking Id find it elsewhere fairly easily. I was unable to find carob chips at shoprite also but they are easily acquired at Wegmans if you are lucky to have one nearby and Im sure most healthfood places would have them, though I just used chocolate chips instead. Tofu, soymilk, soy cheeses and the like are all readily available at shoprite. I love the fact that the baked goods in this book are sweetened with honey or maple syrup as opposed to sugar and unsweetened applesauce is used instead of oils in some recipes. I also love the use of whole wheat flour and whole wheat pasta. My son, my husband and I have all enjoyed most things that Ive made from this book. Some of the recipes have come out a bit bland, but being that its a recipe book for kids food its undersandable and easily ammended with some spices. The recipes that I have tried follow:

Apple-Carrot Muffins- these were delicious and my son loves them. I love that they are made partly with whole wheat flour, it does call for half all purpous flour but it seems necessary for baked goods to come out right. Also, its sweetened with hony or maple syrup, your choice, and uses unsweetened applesauce.

Corn Bread from Emily- This cornbread is amazingly good! It uses only whole wheat flour and cornmeal, no white flour and it tastes superb! Again, my son, my husband and I all devoured it. I had to bake this about 5 minutes longer than the recipe says to, but it came out perfect.

Howlin' Hummus- This one didnt come out so good, but it was my fault, I used bottled lemon juice instead of fresh and I misjudged and put too much and it had an overpowering lemon flavor. I will retry it in the future.

Tofu Tenders- I froze the tofu and thawed it before making this recipe so it would be even more firm. These came out really well as far as being similar to fish sticks, except that they are slightly bland. I know that if I can figure out the right spices to add these will be really amazing. I did make some tarter sauce by mixing relish with mayo and when dipped in the tarter sauce they were pretty good. I just have to figure out the right spice to spice them up.

Past with Black Bean and Tomato Sauce- We just had this last night. I didnt expect much from this because it was so simple, but it tasted very good and my son loved it as well.

Chickpea and Spinach Casserole- This one I found a bit dissappointing. My son and I didnt care for it that much. But it could just be a case of personal taste.

Spinach Casserole They'll Really Like- This one was not bad, could use a little spicing up. The next time I make it I'll add some spices. It certainly has potential.

Blueberry Cobbler - I love this recipe because its so quick and easy to make. I use half whole wheat flour and half white, but Im going to try making it with all whole wheat flour. Its simple and quick and makes a very tasty cobbler that my family loves and it is only sweetened with maple syrup and the blueberries. I love this recipe.

Chocolate or Carob Chip Cake- I made this with semi-sweet chocolate morsels and I actually added the chocolate chips to the batter as opposed to just sprinkling them on top and it made the most decadent, delicious cake! Also another quick, easy recipe.

Blue Hawaii Cake- My family loves this one which is only sweetened with fruit and fruit juices. A very nice little cake that is not overly sweet!

Banana Bread- Wonderful! made with whole wheat flour, with wheat germ added making it more nutricious. And sweetened only with honey or maple syrup and bananas. Another hit with the family.

I am working my way through trying all the recipes and I remake the tried and true ones all the time. I wish there were more cookbooks like this one. Unfortunately the authors dont have any other books that I could find, but if they write any more I will be buying them.

As with most vegetarian and vegan recipes, most entrees include a rather long list of herbs and spices. That is to make up for the lack of salt, sugar and oil. To prepare these recipes, you need to first spend a couple of hours at Whole Foods or Sprouts stocking up on a long list of herbs and spices, as well as the other basic ingredients, such as brown rice, whole wheat pasta, rolled oats, etc.

As I read through the book, I see a large number of recipes that look appealing and reasonably easy to prepare. About half are vegan recipes, and the other half may include milk, cheese and eggs.

Anyone seeking to add some good recipes to their kitchen library will enjoy Marty Mattare's recipes.

Though the recipes in this book are good, they're nothing new if you're familiar with vegetarian cooking. It was mostly everyday foods with meat substitutes (ie. "chicken" salad, breakfast for dinner, smoothies, etc.) We haven't specifically made any of the recipes as they are things we're used to eating already, but if you're new to preparing meatless dishes for kids, it would be an ok choice. I think it would make a great gift for people wanting to host vegetarian kids for the first time (we're sending ours to their grandparents so they have ideas for when the kids visit) or families looking to incorporate a few meatless dishes into their weekly meals.

As the administrator on the Vegetarian nonprofit group's Facebook page […] I am always searching for good books to recommend to our over 85,000 (and growing) membership of vegetarians/vegans.Many of our members are new to this healthy and cruelty free way of eating and need great recipes their kids will enjoy. This is a great book for the whole family. The recipes are easy to prepare, delicious, and actually good for you! As a vegan mom, I can say from personal use of this book that it is excellent.

we are transitioning our children, aged 3 and 6 to vegetarianism, and this book is a godsend. I had first taken it out of the library (an older edition) and knew right away I would buy it. My kids were hot dogs and chicken nugget kids, and I swear, I never thought they would eat anything called a "veggie casserole" but they did. I am slowly weaning them off dairy, but for now, this book does the trick. I pull it out every single night when I am thinking of a dish for them. The dishes are fast and easy to put together, which doesn't hurt either.
