I chose this rating of 5 stars because Jackie Clay deserves it. Her book gives more details than most. Most books tell you not to do something or for you to do it this way and don't change the recipe. Jackie explains why you need to do it using this method. She explains how you can change the recipes to suit your taste and not be unsafe. Easy to understand and follow directions.

This book is not just for canning but for growing the food too. What a bonus that is! I admit I have been a fan of her writing for quite a number of years now. In the past, I had to go through piles of magazines to find her instructions on how to can or grow various foods. Now it is all in one place and makes it so easy to use it. I have it on my Kindle and when I am canning, I keep her book up and use it through the whole process.

I recommend her books to everyone and I plan on buying every book she writes.

If you are growing and wanting to canned your own food this book is a must have the directions are easy. I have compared the canning directions with the Oregon State Extension Office and Jackie Clay-Atkinson is right on with her directions I bought a hard copy for my Mom. Canning your own food is fun and rewarding and you must do it correctly to be safe. Great book for anyone wanting to get back to basics.

Great one can meals. I own and follow many others books but this is the meats and potato no fancy ingredients ( like truffle oil found in others ) and just reading it makes me hungry. Which gives me a question, since we bring just to a boil to pour in cans, will we be able to eat the extra left in prep pot? Hungry canners need to know.

Who knew you can cheese I've used this book so many times and all the recipes have come out great. And yes you can can cheese safely. We've been eating all the recipes from this book and I've canned an entire winters worth of food from it. Take advantage of supermarket sales and put up your food in the fall. The other thing is have to say is the price of this book is steep. Jackies book is ten bucks now on sale on her site. Enjoy.
