In most of Mexico, especially in rural areas, much of the food is consumed in the home. Cooking for the family is usually considered to be women's work, and this includes cooking for celebrations as well  . In Mexico City, the most common roll used for tortas is called telera, a relatively flat roll with two splits on the upper surface. Besides food, street vendors also sell various kinds of drinks (including aguas frescas, tejuino, and tepache) and treats (such as bionicos, tostilocos, and raspados).

I ran across this book in my local library back the late 60's and found it useful and amusing. Many of the recipes have a paragraph or two of history attached to them. I don't know if the recipes are authentic but the the ones I saved from it then are ones I have used again and again over the years. They are tasty and they work. When I saw that I could purchase a used copy of this, I bought it immediately. It's just as I remembered it. Now I'd like a Kindle version.

My mother has used this cookbook since its publication in the 1960's. I bought it used and it's really great, especially its vegetable recipes.

Great cookbook. I bought this paperback version to replace the hardbound one I gave to a dear friend.

I found this book in a used shop for $... and it has become my most prized Mexican Cuisine cookbooks to date. Some of the recipes are so unusual I have never seen them anywhere else in my extensive cookbook collection. George C. With its extensive descriptions of ingredients, methods of preparation and serving techniques as well as a complete glossary of cooking terms and foodstuffs I have found this one book to be an indispensable reference material for my cookbook shelf.
